I'm not totally sure on it yellowing and how the edges would do, but HEY, I saw it on a crafty home show one time. They did pictures and bottle tops on a kitchen table and covered it in a half inch or so of epoxy. They also used metal flashing of some sort to hold the epoxy onthe table.
